Angel Food Cake

Pre-heat oven to 375 degrees 250ml egg whites, room temperature Beat until frothy 2ml cream of tartar 5ml orange extract 250ml granulated sugar Beat gradually into eggwhites. Continue beating until stiff peaks form. 125g weak flour Sift together, then fold gently into eggwhites 125g granulated sugar Pour into an ungreased ten-cup ring-pan or bundt-pan and bake 30-3 minutes until top springs back when touched lightly with a finger.
