Broccoli and Cheese SoupStalks only of two broccoli crowns
Cut into thin rounds across the grain and simmer in unsalted water for an hour or more until soft. Drain, retaining the liquid.
150 grams low-fat chedder
Grate or chop fine in blender.
Blend soft broccoli and cheese together until smoothe. Add only as much of the retained liquid as required to reach the desired consistency. Return to the pot and heat gently.
