2 cups of leftover cooked rice

Mix together, then we're going to sprinkle on a little bit of vanilla. For the binding agent we add two raw eggs. This is going to make a nice, tight batter.

6 tablespoons of flour

2 teaspoons of baking powder

3 heaping tablespoons of sugar

Vanilla extract

Sprinkle sparingly onto dry ingredients

2 eggs

Beat and add to dry ingredients to make a firm batter

Prepare a pot of hot oil: drop a grain of rice in. If the grain pops up to the top and starts bubbling, the oil is hot enough.

Shape the batter between two tablespoons into an ovoid and release it gently into the hot oil. It will pop up to the top and begin to fry. Calas turn themselves over. Remove from the oil when they are brown on both sides.
