Candied Ginger

Preheat oven to 350

Thinly sliced ginger remaining from making Ginger Tea

Simmer together until Ginger becomes transparent, about 45 minutes. Remove the ginger and let drain, reserving the syrup to make After Dinner Mints or Hard Candy

250 g sugar

250ml water

Toss the ginger slices in granulated sugar, then arrange on a rack to dry. Store in a closed mason jar.
