Clarified Butter
serves 4 to 6
250 grams butter | Melt in the microwave, about one minute at 1200W or until completely melted but not boiling. Pour the butter into a tall narrow glass and store in the refrigerator. |
When solidified, scrape the milk solids off the top of the chilled clarified butter and reserve for flavouring vegetables and pastries. The remaining clarified butter yield is approximately 185grams |
