Crustless Carb-less Spinach Pizza

Ingredients

4 ounces (100 grams) fresh spinach
2 tablespoons (30ml) eggwhite
1 oz (30 grams) fat-reduced Mozzarella cheese
1 tablespoon (15ml) powdered parmesan cheese

1/2 cup (125ml) grated fat-reduced Mozzarella cheese


Method

Preheat oven to 350 and arrange oven rack at its highest position.

Chop spinach in a food processor. Add egg white and process until well-mixed. Add one ounce of fat-reduced Mozzarella and a tablespoon of powdered parmesan and process until the mozzarella is all chopped up and mixed in.

Spray or brush a cookie sheet with oil. Spread the spinach mixture on the cookie sheet into a circle 10 inches across, and pat it down smoothly. Sprinkle with Oregano. Bake on the top rack half an hour.

Increase oven temperature to 400 degrees. Sprinkle round with grated mozarella. Bake until cheese is bubbly and toasted, about another 20 minutes.
