Mini Jacket Baked Potatoes

serves 4 to 6

8 small potatoes: choose elongated ovoid ones

Prick the potatoes with a fork, rub with the oil, then toss with sea salt. Arrange on a baking sheet and bake for 1 hr. Let the potatoes cool for 10-15 mins,

10 ml olive oil

5 ml salt

30 ml butter

Cut potatoes in half. Scoop out the centre flesh and mash with butter. Pipe the mixture back into the shells.


Sprinkle over potatoes as a garnish and rebake for ten minutes
