Roasted Tomato Sauce

serves 4 to 6

5 large tomatoes

Put all ingredients in a covered roasting pan. Put it in the oven – ideally when you have the oven on for some other reason anyway. It can roast for 30 minutes to a couple of hours, at any temperature between 300 and 40 degrees. The vegetables aren't fussy; just don't burn them (some slight carmelizing is okay if it happens.)

When roasted and soft, blend until fully liquified.

1 large onion, peeled

2 sweet peppers

3 garlic cloves

1 tsp. dried, or a 5” sprig fresh Basil

1 tsp. dried, or a 5” sprig fresh marjoram

1 tsp. dried, or a 5” sprig fresh Oregano

1 tsp. dried, or a 5” sprig fresh Thyme
