Simple Syrup
serves 4 to 6
| 2 1/2 cups sugar | Mix together in a heavy lidded saucepan and heat gently to a simmer. Simmer for three minutes to allow the steam to rinse any crystals down into the pot. |
| 1 1/4 cups water | |
| 1/4 teaspoon lemon juice | |
| Remove lid. Raise heat. Boil for 5 minutes without stirring. | |
| Optional: | Add to boiling syrup, and turn off heat. Allow syrup to cool without stirring. |
| Cool syrup, pour into 3 x 250ml canning jars and cover tightly. Store for future use. | |
