Simple Syrup

serves 4 to 6

2 1/2 cups sugar

Mix together in a heavy lidded saucepan and heat gently to a simmer. Simmer for three minutes to allow the steam to rinse any crystals down into the pot.

1 1/4 cups water

1/4 teaspoon lemon juice

Remove lid. Raise heat. Boil for 5 minutes without stirring.

Optional:
1 oz cognac or brandy OR
1 oz liqueur OR
5g Vanilla extract OR
5g lemon, orange, almond, cinnamon or other extract

Add to boiling syrup, and turn off heat. Allow syrup to cool without stirring.

Cool syrup, pour into 3 x 250ml canning jars and cover tightly. Store for future use.
